Ingredients
6 cups of rolled oats
½ cup sesame seeds
½ cup sunflower seeds
½ cup pepitas
1 cup almonds (or your favourite nuts)
¾ cup rice syrup or maple syrup, or combine both
¼ cup brown sugar (optional)
2 tsp vanilla extract
1 Tbsp coconut oil
salt (optional)
Summary
Bake a tray of delicious homemade granola with lightly toasted oats, and chock full of your favourite seeds and nuts. It’s easy, cost effective and of course very delicious – especially dolloped with yoghurt or kefir along with a little fruit. Ps. Sealed in a jar with a ribbon on top, this granola can become a thoughtful, simple gift.

Homemade granola
Preheat oven to 180 degrees.
Put all the dry ingredients in a large pan and toast over a medium heat, stirring regularly. (I used almonds and macadamias because that’s what I had in the pantry. Use whatever you’ve got on hand). Keep stirring until everything starts to brown slightly.
In a small saucepan, mix the rice or maple syrup, sugar, vanilla and coconut oil and melt together over a medium heat.
Pour over the dry ingredients and mix together so that everything is coated. If you like a bit of salty with your sweet, sprinkle with a few salt flakes.
Pour into two baking trays that have been lined with baking paper and bake for about 20 mins. Give it a stir every 5-10 minutes and keep an eye on it to make sure it doesn’t burn. When it’s golden brown and crunchy, it’s done!
Remove from the oven, allow to cool completely and then store in an air-tight container. Enjoy!

If you like your granola more ‘clustery’, just increase the quantity of wet ingredients.

What do you think I could put in a nut-free version?
Yes omit the nuts if you like, Alison. A nut-free mix could be oats, pumpkin seeds, sunflower seeds and coconut flakes. Maybe even try some buckwheat or chia seeds in there too.

This looks delicious! Is there an oil other than coconut that I could use, please?
Try it out with a neutral oil like rice bran, perhaps? Anyone else have a suggestion, there?!
Just made this and added in a handful of chopped dates and a sprinkle of cacao nibs once it was out of oven and cooling. Yummmm!
