Clara’s version has salty preserved lemon and feta, making the classic watermelon salad magic when combined with those sweet red chunks. I used basil from the polytunnel as we didn’t have any dill on hand, and I did a quick version of her delicious sounding homemade red onion pickle, dousing a finely chopped red onion with red wine vinegar and a sprinkle of sugar and cracked pepper, letting that soften while I did the rest. Thanks Clara, a great and simple summer recipe to share far and wide.
Clara’s Watermelon Salad.
Chunks of watermelon with some Meredith Goat’s feta, thin slices of preserved lemon and home made red onion pickle (sliced red onion, bottled with red wine vinegar, sugar, star anise, bay leaves and pink peppercorns) and a few sprigs of dill.
So delicious it doesn’t even need dressing! 😀
